My plan for dinner was to make crock pot stuffed peppers, but when I got up this morning I realized I hadn’t thawed the ground turkey. I really didn’t feel like loading the kids up in this cold weather just to get some more ground turkey so I thawed it out during the day and just kinda winged it & they turned out really good!
Recipe makes 4 servings
1 serving = 6 weight watchers points+
4 green bell peppers
1/2 lb lean ground turkey
2/3 cup cooked brown rice
1 medium onion diced
1 tbsp worcestershire sauce
1 tbsp mustard
1 10 oz can condensed tomato soup
Salt & pepper to taste
1/2 cup low fat shredded cheese (I used mozzarella)
Cut the stem & seeds out of the green peppers leaving a whole in the top.
Brown your ground turkey adding your onion once the turkey is 3/4 of the way done. Once the turkey & onions are done stir in your worcestershire sauce, mustard, tomato soup, rice, salt, & pepper.
Spoon your meat & rice mixture evenly into your green peppers. Top each one with 2 tbsp shredded cheese. Place in an 8×8 pan. I used a cake pan cause it was just the right size to hold all 4 pepper & keep them standing.
Bake in a preheated 375 degree oven for 35-40 minutes.
I served mine with salad & crescent rolls.
