I just realized I have never done a post about kale chips! I used to make them all the time, but we got kind of sick of them. I just made a batch today & was reminded how much I love them! They are crunchy & salty so they are a great alternative to chips. I used to use 2 tbsp olive oil on them, but today in only used 1 and they still came out delicious!
You can make different flavors of them. I have read about cheesy ones & cinnamon honey ones, but I prefer them with just salt & sometimes a little pepper.
Entire recipe = 3 weight watchers points+
Ingredients –
8 cups chopped kale (remove big stems)
1 tbsp olive oil
1 tsp salt
Once your kale is rinsed, chopped, & dried toss it all in a large bowl. Drizzle your oil over the kale and toss until well coated. Pour it out onto 2 parchment paper lined baking sheets. Sprinkle with salt. Don’t over salt because the kale shrinks a lot so you really don’t need much. If you think you might need more wait until after it is baked to add it.
Bake in a preheated 275 degree oven for 35-45 minutes.
They are extra delicious when they are warm but they keep well if kept in an air tight container. Make sure they are cool before putting into a container though so they don’t get soggy.
