Slow Cooker Honey Garlic Chicken

This was pretty easy to make & it was also delicious! I served it over rice, but I think it could also be good served on its own or even in a sandwich or wrap.

Recipe makes 6 servings
1 serving = 8 weight watchers points+

Ingredients –
2-3 pounds chicken breasts bone in
1/2 cup honey
1/2 cup low sodium soy sauce
1/4 cup hoisin
1/4 cup blackberry jam
1/2 cup diced onion
3 cloves garlic minced
1 tbsp cornstarch

Start by spraying your crock pot with non stick cooking spray.

Lay your chicken breasts in the bottom of the crock pot. Try not to over lap.

In a separate bowl whisk together your onions, garlic, honey, soy sauce, hoisin, & blackberry preserves.

Pour mixture over chicken breasts.

Cook on low for 5 hours.

Once cooked pull the chicken breasts out of crock pot & shred using 2 forks.

Transfer liquid in crock pot into a saucepan. Whisk together 1 tbsp cornstarch & 3 tbsp cold water. Slowly whisk cornstarch mixture into sauce. Cook over medium high heat stirring regularly until thickened.

Pour sauce onto shredded chicken & stir to coat.

I served mine with brown rice & roasted brussel sprouts.
