Lean Turkey & Spinach Lasagna



This was delicious!  I hadn’t had carbs all day and my mouth was watering as I made it!

Recipe makes 8 large servings
1 serving = 8 weight watchers points+

Ingredients –
12 lasagna noodles (may be less points if you use whole wheat ones but I just used regular)
2 tbsp olive oil
1 lb 93% lean ground turkey
6 cups fresh spinach (I used some frozen and I wouldn’t recommend it. It made it a bit watery)
2 cups part skim ricotta cheese
2 cups part skim shredded mozzarella cheese
1 onion diced
1 clove garlic minced
1 20 oz jar pasta sauce ( I used traditional hunts spaghetti sauce)
1/2 cup mushrooms thinly sliced
3 tbsp italian seasoning
1/4 tsp black pepper
1 tsp salt

First cook your lasagna noodles until al dente. Drain & rinse with cold water

Next heat your oil in a deep skillet and toss in your diced onion. Once your onions are soft add your ground turkey & garlic. Brown until turkey is thoroughly cooked.

Once turkey is cooked add your mushrooms, pasta sauce, italian seasoning, salt, & pepper. Simmer for a few minutes.

While meat mixture is simmering stir together your ricotta cheese & spinach.

Spray a 13×9 pan with non stick cooking spray.


Lay out 4 noodles on the bottom of the pan.


Spread 1/3 of the spinach ricotta mixture on top of noodles.


Spread 1/3 of the meat mixture on top of spinach & ricotta.


Sprinkle 1/3 of the mozzarella on top of the meat mixture.

Repeat layers twice more ending with the remaining mozzarella on top.


Bake in a preheated 375 degree oven for 20-30 minutes.
