Who would have thought that you could make a delicious pizza crust with cauliflower? If you are trying to eat healthy but are craving some pizza this will do the trick. You can tell it isn’t regular pizza but it is still really good.
My parchment paper burned so I don’t know that I left the crust in as long as I should have. It wasn’t firm enough to pick up and eat but we just used forks to eat it.

Recipe makes 6 servings / slices
1 serving = 5 weight watchers points+
Ingredients –
Sauce –
6 oz tomato paste
6 oz water
1 clove garlic minced
1 tsp basil
1 tsp oregano
1/2 tsp salt
1/2 tsp onion powder
1 tsp truvia or stevia
Crust –
1 head of cauliflower
1 cup part skim shredded mozzarella
1 tsp oregano
1 tsp basil
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
1 egg
Topping –
1 3/4 cups part skim shredded mozzarella
1/2 cup turkey pepperoni
First you want to chop up your head of cauliflower & get it boiling or steaming.
While your cauliflower is cooking whisk together all your sauce ingredients and put in the fridge for 10-15 minutes.
Once your cauliflower is cooked drain it and pulse small amounts in the food processor until the texture of rice. Don’t over pulse it. Put it in a cheesecloth lined bowl. Pull all 4 corners of the cheesecloth together and squeeze all the moisture from the cauliflower. This is quite difficult because the cauliflower is so hot. If you have time you may want to let it cool a bit before doing this step.
Your cauliflower should be dry & crumbly.
Mix 1 cup mozzarella, egg, & spices into the cauliflower.
Line a baking sheet with parchment paper & spray with non stick cooking oil spray. Start spooning your cauliflower mixture onto your parchment paper lined baking sheet. I started in the middle and worked my way out. Get it as thin as you can without leaving any holes.
Bake in a preheated 450 degree oven for 20 minutes.
Set your oven to broil. Put your sauce & toppings on the crust.
Put back in the oven on broil for a few minutes until the cheese is melted.
Cut into 6 slices & enjoy!
