These were a hit with the whole family! My husband couldn’t believe there wasn’t any flour in them! They are super easy too!
For my first batch I added an extra egg cause my banana was so large but that made them really runny and they didn’t really turn out. My second batch I actually followed the recipe and they turned out perfect! Imagine that!

Ingredients –
1 ripe banana
2 eggs
1 tsp cinnamon
1/2 tsp vanilla extract (not in original recipe)
Mash up your banana and then whisk in remaining ingredients.
Make sure your pan is very hot before you pour out your pancakes. These cook pretty similar to regular pancakes except they don’t really bubble up. Flip when you can tell that the edges are cooked. If you make them really big they don’t really turn out when you try to flip them.
Remove from pan once both sides are golden.
I served mine with pure maple syrup & turkey bacon.
Toddler approved!
