Crock Pot Veggie Soup



Not only was this easy to make, but it made my house smell amazing, is all veggies so it is 0 weight watchers points+, and it is so good! The only thing I may change is I may chop up my spinach next time cause it made it difficult to eat.


10 oz baby spinach (I think fresh is always best but you could use frozen if that is what you prefer)
2 medium carrots chopped
2 ribs of celery chopped
1 onion diced
1 clove garlic minced
28 oz can diced tomatoes
4 cups vegetable stock
1 tbsp basil
1 tsp oregano
2 bay leaves

Toss everything in the crock pot & cook on high for 5 hours.
That’s it!


I served mine with grilled ham and cheese sandwiches.
