Skinny Broccoli Red Pepper Quiche


I love quiche but this was my first attempt at making it.  This doesn’t have a crust & it isn’t round, but it had all the flavor of a quiche! I think next time I may use less garlic & veg & add ham.

Makes 6 large servings
1 serving = 3 weight watchers points+
Ingredients –
1 red pepper thinly sliced
1 onion diced
20 oz frozen broccoli thawed & drained
2 cloves garlic minced
1/2 cup shredded mozzarella
3/4 cup egg beaters or better n’ eggs
3/4 cup heart smart low fat bisquik
1 1/2 cups 1% or 2% milk
1 tsp salt
1/4 tsp pepper
Spray an 11×7 pan with non stick cooking spray. Put half the broccoli, half the onion, & half the pepper in the pan.
Put all your cheese on top of that.
Put your remaining broccoli, onion, and peppers on top of the cheese.
Mix your egg beaters, milk, bisquik, garlic, salt, & pepper in a blender.
Pour mixture evenly over your veggies.
Bake in a preheated 400 degree oven for 50 minutes or until browned
The center may have some extra liquid to it becomes of the juices from the veggies. If you are unsure if it is done test it with a meat thermometer.  You want the middle to be at least 160 degrees.  Mine was 180 when I took it out of the oven
Let sit for about 5 minutes before cutting.
I served mine with salad.

  1. I made it again tonight with 1 red pepper, 2 cups fresh spinach, 1 onion, 6 slices of ham, double the cheese, and no garlic & it was even more amazing! Still 6 servings but 4 weight watchers points+ for each point.
