These are so good and there are endless possibilities for different flavor combinations. I am pretty partial to Hawaiian pizza personally so I was pretty excited when I found this weight watchers friendly recipe on http://simple-nourished-living.com.
This recipe is for 1 serving, but I made about 5 servings when I made them and there was only 1 left after dinner!
1 serving = 2 mini pizzas = 6 weight watchers points+
1 whole wheat english muffin
2 tbsp marinara sauce
2 slices deli ham diced
2 tbsp shredded mozzarella cheese
2 tbsp pineapple tid bits (I accidentally bought pineapple chunks so I just cut them up)
1 tbsp diced red onion
Toast the english muffin lightly. Spread 1 tbsp sauce on each muffin half. Distribute the cheese, onion, pineapple, and ham evenly over the muffin halves. Place mini pizzas on a greased baking sheet. Bake in a preheated 350 degree oven for 8-10 minutes.
